    Baked Chicken in Coconut Milk

    List of Ingredients

    4 chicken thighs, bone in
    4 chicken legs
    1 cup sorgum flour
    2 teapoons salt
    1/4 teaspoon pepper
    stick of Earthbalnce "butter"
    1 1/2 cans coconut milk

    Recipe

    1. Mix flour, salt and pepper together in a bag.
    2. Place each piece of chicken in bag with flour mixture and coat.
    3. Heat "butter" in pan and fry chicken so that each piece has a
    nicely browned skin, although chicken itself is still not fully cooked.
    4. Place each piece of browned chicken in a oven roasting pan and
    cover with coconut milk.
    5. Cover roasting pan with foil and bake in a preheated oven at 350
    degrees for 1 hour 45 minutes.

    The chicken will only have a hint of coconut taste but will be very
    tender.
