List of Ingredients
6 boneless skinless chicken breast halves
1 T. oil
¾ c. red pepper, chopped
¾ c. green pepper, chopped
½ c. onion, chopped
½ c. mushrooms, chopped
1 garlic clove, minced
2 c. uncooked brown rice
2 c. chicken broth
1 ½ c. corn, with juices
¼ t. salt
1/8 t. pepper
¼ c. almonds, toasted
2 T. parsley
Recipe
1. In skillet, brown chicken in oil for 4 min. on each side. Keep warm.
2. Saute peppers, onion, mushrooms and garlic until tender. Stir in broth, corn, salt and pepper and bring to boil.
3. Spread rice mix in bottom of greased baking dish and top with chicken. Cover and bake 20 min. at 350.
4. Uncover and bake 5 min. longer. Top with parsley and almonds.
