Chicken and Coconut Milk - and Curry

Chicken pieces - cut out the chunks of fat hanging off - ick factor is
huge if left on
Mix, salt, pepper, yellow/madras curry powder, you can add a little
chili powder if yu want too just enough to make the flavor deeper but
without making it too spicy for kids
if you have cardomon pods then break some up in there too - just like
one or 2 depending on how much you are making.
Pour in a little coconut milk-- or even the coconut creme- mix it with
the spices to make a paste. Then mix with the rest of the can of coconut
milk
Put into a covered baking pot or dish.
Pour curry coconut mixture over the chicken. You can add some chicken
stock too and sliced potato wedges with a little bit more salt if using
an unsalted stock.
Then bake with the cover on. I forget how long it takes, but it is
sooooooooo good. About 400 degrees.Recipe
