    1 ½ lbs. boneless skinless chicken thighs
    3 T. maple syrup



    1 T. mustard
    ½ c. GF breadcrumbs, crackers, or chips
    ½ c. sweetened shredded coconut
    salt

    pepper

    garlic powder

    Recipe



    1. Wash and pat dry chicken thighs. Heat maple syrup to make runny and blend in mustard.
    2. Combine breadcrumbs with shredded coconut in another bowl.
    3. Coat chicken in syrup/mustard mix on both sides, letting the extra drip off. Then coat in coconut/breadcrumb mix.
    4. Lay in dutch oven without touching. Lightly spray olive oil (this keeps the coconut from burning). Dash on preferred spices.
    5. Place in oven for about ½ hr., or until coating is browning. Turn oven down to 325 and bake another 10 min. or so.
