3 lb. chicken pieces (with bone and skin)
4 t. olive oil
2 onions, peeled and chopped
4 cloves garlic, minced
2 t. olive oil
4 t. lemon juice
2 t. grated lemon rind
2 c. gf ketchup
2 t. brown sugar
2 t. dry mustard
2 t. curry powder
4 t. gf wine vinegar
2 t. teriyaki or soy sauce or beef broth
salt and pepper to taste
Recipe
1. Cook chicken pieces in 4 t. hot oil and brown until golden in color. Remove chicken; drain liquid.
2. Combine all other ingredients. Stir rapidly, scraping at the bottom so the browned bits flavor the sauce. Return chicken to pan. Simmer, uncovered, until cooked through (20-30 min.)
