List of Ingredients
4 chicken breasts or 8 thighs, boneless, skinless
salt or lemon juice
½ c. orange juice concentrate
2 eggs, beaten
½ t. ginger
1 c. popcorn flour
2/3 c. coconut
Recipe
1. Preheat oven to 375. Cut chicken into chunks. Season with salt and pepper or lemon juice.
2. Mix orange juice, eggs, and ginger. Combine popcorn flour and coconut.
3. Dip chicken in wet ingredients and then in flour mix. Place in foil-lined casserole and bake 35 min, uncovered.
