List of Ingredients
3lbs. chicken pieces
½ c. oil
1 t. salt
1 t. paprika
2 T. ghee
1 t. saffron
1 c. long grain brown rice, uncooked
3 c. chicken stock
1 red pepper, chopped
1 c. peas
½ c. black olives, optional
Recipe
1. Season chicken with salt and paprika. Sauté in oil until brown. Remove
chicken, drain off oil.
2. Melt ghee, add saffron and rice. Cook a few minutes, stirring. Add stock, cover, and simmer 10 min.
3. Return chicken to pan, add red pepper. Cover and simmer 30 min. Add peas and simmer another 5 min. or until chicken is tender and peas are done. Garnish with olives.
