1 lemon
rosemary
10 garlic cloves, minced
zest of 2 lemons
1 t. salt
½ c. oil
1 whole chicken
Recipe
1. Preheat oven to 500. Put roasting pan in oven and heat to sizzling.
2. Boil water, add lemon and let it cook 5 min. Smash garlic, rosemary, lemon zest, and salt to a paste. Add olive oil. Smear over chicken.
3. Place chicken, cavity side up, in roaster. Place lemon deep inside cavity. Roast 15 min. (Okay if oven starts to smoke a bit.)
4. Lower temp. to 425 and cook about 45 min. until internal temp is 155 on breast and thigh is 180.
