    My mother-in-law is here for two days. She is the QUEEN of the chocolate chip cookie. Here's my adaptation of her recipe -- GF/CF/SF -- we made it today and the result was GREAT. Does have sugar and eggs, though -- I'll have to try it with EnerG egg replacer next time, just to see.

    List of Ingredients




    1 stick unsalted Fleishmann's margarine
    1 egg
    1.5 tsp alcohol-free vanilla
    1 cup plus 2 TBS white rice flour
    1/2 tsp baking soda
    1/2 tsp salt
    1/3 cup white sugar
    1/3 cup brown sugar
    1 cup Paskesz Chocolate Chips

    Recipe



    Blend margarine, egg and vanilla. In small bowl mix, flour, baking soda, salt, and both sugars. Then blend the dry ingredients with the wet mix, and blend in chocolate chips.

    Chill the dough briefly to firm it up.

    Make into balls by the spoon full (regular size spoon) and place on cookie sheet. Wet your hand with cold water and squash the balls flat. Bake 10 - 14 minutes at 350 or a little higher. Watch out -- you want them brown, but once they start to brown, they go fast.
