    Big, Bad, Black Bean Brownies

    Recipe Introduction


    The first time I made it faithfully to the recipe, just left out the
    walnuts as we don't like nuts in our brownies. It was good, but not squishy enough for me. The second time I added GFCF chocolate chips and it was heavenly.

    List of Ingredients




    1/2 Cup Margarine (I used Mother's)
    2 Cups sugar (I used thick brown sugar) or 2 teaspoons stevia powder or 2 Cups Splenda - (I have not tried the sugar free versions)
    6 tablespoons cocoa
    1 tablespoon instant coffee powder
    4 eggs
    1 cup pureed black beans (made from 1 15.5oz can of black beans, drained and rinsed - I added a little water to the beans to aid in the pureeing. I used the little cup that came with my immersion blender. If you use beans that you cook from scratch you need
    1 3/4 C beans to make 1 cup puree)
    3/4 cup chopped walnuts (optional)
    I added 1 cup chocolate chips to the recipe

    Prehead oven to 350F

    Beat together the marg, sugar, cocoa and coffee.
    Add the eggs one at a time, beating between additions
    Beat in the bean puree. stir in nuts or chocolate chips
    Pour batter into a 9x13 inch greased pan Bake for 45-50 min
    cool completely and cut into squares
