    Breakfast Cookies (Adapted)

    Recipe Introduction

    This is Jennifer's adaptation of a recipe submitted by Angela Lowry.

    List of Ingredients

    1 1/2 c quinoa flakes
    1 1/4 c gfcf flour mix (I used Carol Fenster's bean blend)
    1/4 c garbanzo bean flour
    1 c organic brown sugar
    1/4 tea kosher salt
    1 tea gf baking soda
    1 tea x gum (xanthan gum)
    1/4 c Spectrum shortening, melted
    1/4 c organic canola oil
    1/2 c Turtle Mountain coconut milk (or use any milk sub) - mixed with 1/2 tbl gf vinegar (I used apple cider)
    1 c organic pear, peeled and diced...two 1/2 small pears or one large pear

    Recipe

    Preheat oven 375 degrees.

    Combine all dry ingredients thoroughly.

    Add melted shortening & oil, mix until evenly distributed.

    Stir in soured milk, then fruit.

    Drop by tablespoon onto greased baking sheet.

    Bake until browned...original recipe says 12 mins but my oven stinks so it was about 20 mins for me.

    Jennifer's Notes: These are by far the best gfcfef cookie I've tasted! Even beats any choc chip I've had on this diet!!! Its semi-crunchy on the outside, moist and chewy on the inside and has just the right amount of sweetness and then you have the punch of fresh fruit!!!
