    Chocolate Biscotti

    List of Ingredients

    1 cup plain gluten free flour
    1/3 cup potato flour
    1/4 cup gluten free cornflour
    1/2 cup brown sugar
    2 tbsp cocoa powder
    1 tsp xanthan gum (optional)
    1/4 tsp gluten free baking powder
    2 tbsp hot water
    2 eggs

    Recipe

    1. Sift flours, sugar cocoa, xanthan gum, and baking powder
    together in a bowl.
    2. Add water and eggs, mixing well.
    3. Turn dough onto gluten free floured surface.
    4. Knead until smooth.
    5. Place on lightly greased oven tray.
    7. Bake in moderate oven (180c) for 35 minutes or until lightly browned.
    8. Using a bread knife, cut intl 3/4 cm slices.
    9. Bake for an extra 15 to 20 minutes, or until crips.
    11. Cool on wire rack.
    12. Store in an airtight container
