Grandma "B's" Pumpkin Drops

List of Ingredients
3/4 cup firmly packed brown sugar
2 Tbls honey
1 cup canned pumpkin
1/2 cup canola oil
1 tsp vanilla
1-1/2 cup GF flour mix (recipe filed as Corn Free Flour Mix in the Flour Mix category)
1 tsp gf baking powder (corn free if needed)
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
1 cup golden raisins, optional
1/2 cup chopped nuts, optional
Recipe
Place brown sugar, honey, pumpkin, oil, and vanilla in a mixing bowl.
Beat until well blended.
In a separate bowl, stir together the dry ingredients and spices.
Add dry ingredients to wet pumpkin mixture and mix well.
Stir in raisins and nuts if desired.
Drop by rounded tablespoonfuls onto a parchment-lined or greased cookie sheet.
Bake at 350 degrees for 12-15 minutes or until set.
If desired cookies can be topped with orange icing after cooled.
