    Adapted from a Chabad recipe by BL (and slightly modified by Linda)

    List of Ingredients




    1 cup sugar
    1/3 cup oil
    1/3 cup shortening
    3 eggs
    1/2 cup orange juice
    1 tsp. GF vanilla
    4 cups gluten-free flour blend
    1 Tbsp baking powder
    1 tsp. salt
    2 tsp. xanthan gum
    1 egg, beaten
    Hamantaschen filling of your choice (fruit preserves, CF chocolate chips)

    Recipe



    Preheat oven to 350°F. Cream sugar, oil and shortening. Add eggs,
    juice and vanilla, mix well.

    Blend all dry ingredients and mix with wet ingredients until well mixed.

    Refrigerate dough for one hour.

    Place half the dough on a floured board and, using a floured rolling pin, roll out to 1/4 inch.

    Cut circles using biscuit cutter or the
    bottom of a glass.

    Put a small amount of desired filling in center of
    each circle, and fold up sides to form the shape of a triangle.

    Place on cookie sheet lined with parchment paper.

    Brush each cookie with beaten egg dough before baking.

    Bake for approximately 20 - 22 minutes.
