    No Bake Chocolate Cookies

    Source of Recipe

    Glutenfree Girl at Recipezaar

    Recipe Introduction

Makes 30 - 40 little balls Be sure to check your marshmallows as some companies coat them with wheat to prevent sticking.

    List of Ingredients

    1/2 cup margarine
    4 cups mini marshmallows
    1/4 cup milk sub
    2 cups CF chocolate chips
4 cups gluten-free crisp rice cereal (author used Gluten Free Rice Twice)
    1 cup shredded coconut

    Recipe

    1. In a large saucepan, melt margarine over low heat. Add
marshmallows and milk sub. Heat until melted, stirring constantly.

    2. Stir in chocolate chips, and heat until melted.

    3. Remove from heat.

    4. Cool until mixture thickens.

    5. Blend in rice cereal.

    6. Coat hands with margarine or oil and roll into 1-inch balls.

    7. Then roll ball in shredded coconut.

    8. Place balls on a wax paper lined cookie sheet and place in the fridge to harden.

Author's note: I made half the batch that way and then for the second half I added the remaining shredded coconut into the mixture and skipped rolling the balls in the shredded coconut -- this way it looks like I made 2 different kinds of balls.
