List of Ingredients
375 ml GF flour blend* 1 1/2 cup
10 ml baking powder 2 tsp
7 ml baking soda 1 1/2 tsp
5 ml ground cinnamon 1 tsp
2 ml nutmeg 1/2 tsp
1 ml salt 1/4 tsp
.5 ml ground cloves 1/8 tsp
150 ml olive oil 2/3 cup
125 ml brown sugar, firmly packed 1/2 cup
2 eggs 2
300 ml pumpkin, thickly cooked 1 1/4 cup
5 ml vanilla extract 1 tsp
250 ml quick or regular rolled oats 1 cup
250 ml pitted dates, chopped 1 cup
Recipe
In medium bowl, combine flour, baking powder, baking soda,
cinnamon, nutmeg, salt and cloves; set aside.
In large bowl with mixer; beat butter and sugar until light and fluffy. Beat in eggs, then pumpkin and vanilla. Stir in flour mixture, oats and dates until well combined. Drop dough by teaspoonfuls about 1 inch (2.5 cm) apart
on lightly greased baking sheet.
Bake in preheated 375 F (190 C) 12 minutes or until browed. Remove to wire rack to cool completely.
