    1 1/4 c Peanut Butter
    1 c. Smart Balance Light (or any cf margerine)
    3/4 c sugar
    3/4 c brown sugar
    3 eggs
    1/2 t gf vanilla
    2 1/2 c GF flour mix (Robin's Flour Mix filed under Flour Mixes) + any extra to make the dough not stick to your fingers
    1 t GF Baking Powder (recipe filed under MYO)
    1 t Aluminum Free Baking Soda
    2 rounded teaspoons of xanthum gum

    Recipe



    Cream the margerine, sugars, peanut butter, and eggs.

    Add vanilla and mix.

    Add dry ingredients while mixing.

    Drop by spoonfull on cookie sheet (I lined mine with parchment paper) and make criss-crosses with a fork dipped in white sugar.

    Bake @ 375 degrees for about 12 minutes.

    Mine didn't get very dark, I wanted them to be soft.
