    This is a true southern favorite which was already gf and easily converted to be cf as well.

    List of Ingredients




    1 cup water
    2 Tbsp cf margarine/ oil
    1 cup yellow cornmeal
    1/2 tsp salt
    1/2 tsp sugar
    1/2 cup milk substitute, any type

    Recipe



    Put the cornmeal, salt and sugar in a heatproof mixing bowl. Heat the water and marg/ oil in a saucepan or the microwave to boiling, then pour into the bowl of dry ingredients. The cornmeal will thicken up almost instantly. Add the milk sub and stir until the batter is
    thoroughly mixed.

    Use a tablespoon to drop blobs of batter onto a greased skillet and cook like pancakes. These should be smaller than regular pancakes so they hold together well. Serve with maple syrup and apple butter.
