    Slow Cooker Chili Beef Stew

    List of Ingredients

    1 1/2 lb beef stew meat
    4 medium potatoes, cut into 1-inch pieces
    1 medium onion, coarsely chopped (3/4 cup)
    3 cans (14.5 oz each) diced tomatoes with zesty mild green chilies, undrained
    1 3/4 c. beef broth
    1 tablespoon chili powder
    2 teaspoons ground cumin
    1 teaspoon garlic salt
    1/8 teaspoon pepper

    Recipe

    In 3 1/2- to 4-quart slow cooker, mix all ingredients.

    Cover and cook on Low heat setting 9 to 10 hours.


    Substitutions:

    Plain canned diced tomatoes and 3.5 oz diced green chilies per can.

    1 teaspoon garlic powder + 1/8-1/4 teaspoon salt.

    Replace beef and beef broth with chicken and chicken broth.


    I made it for the first time on Tuesday for a pot luck, so I would be sure that there was something there I could safely eat (good thing, since everything else there was pizza and bakery items!). I just had for breakfast the cup that was left over - yum! Yesterday, I made another pot, using chicken instead of beef - I'll have that tonight.
