FRESH LEMON CUSTARD

4 egg whites
3 egg yolks
2/3 cup GFCF milk
1/4 cup lemon juice (preferable freshly squeezed)
1 teaspoon fresh grated lemon zest
1/4 teaspoon salt
3/4 cup sugar
1/4 cup arrowroot powderRecipe
Preheat oven to 350 degrees. Have ready six one-cup custard cups or ramekins.
Beat egg whites until stiff; set aside.
In a mixing bowl, beat egg yolks; add milk, lemon juice, and zest; mix well. Add salt, sugar, and flour; mix until custard is smooth.
Gently fold egg yolk mixture into egg whites. Pour custard into cups; place cups in a large baking pan.
Fill pan 1-inch deep with boiling water. Bake 25 to 30 minutes, until golden.
