Lemon Puddle Pudding

Recipe Introduction
Delicious lemony individual souffle sponge puddings with a creamy lemon sauce.
List of Ingredients
2 lemons, grated rind
2 medium eggs separated
50g/2oz CF margarine, at room temperature
75g/3oz caster sugar (berry sugar in the Canada, Superfine in the US)
50g/2oz Glutafin Select White Mix*
1 x 5ml tsp gluten-free baking powder
150ml/5floz double cream
1 x 15ml tbsp icing sugar for dusting
Lemon sauce:
1 lemon, grated rind and juice
50g/2oz golden syrup
110ml/4floz coconut cream (or nut fluff)
Recipe
1. Combine sauce ingredients in a small bowl and microwave for about 30 seconds to obtain a pouring consistency. Spoon sauce into 6 lightly buttered small ramekin dishes.
2. Make souffle sponge. Beat egg whites with an electric whisk until really stiff. You should be able to invert the bowl without losing the mixture.
3. Beat remaining sponge ingredients with an electric whisk to make a runny batter.
4. Gently fold the whisked egg white into the sponge using a large metal spoon.
5. Spoon sponge into the ramekins.
6. Stand ramekins in a shallow roasting pan of water. Cook for 20 minutes until the sponge has risen and springs back when lightly touched.
7. Sprinkle with the sieved icing sugar and serve.
8. The souffle sponges will collapse a little on standing so are visually at their best straight from the oven. However they taste delicious chilled and served with a spoonful of Greek yoghurt (thick soy yoghurt).
BL's Notes: *Glutafin mixes are made with wheat starch. While this is an acceptable alternative in the UK and European Union, it is not considered to be safe in N. America so I suggest you sub your own favourite "white" blend. Glutafin Select white mix also contains a small amount of cane sugar so you may have to adjust for sweetness in the recipe, but from what I see, probably not. It also contains guar gum as a stabilizer so if you don't already, you might want to add a tsp of guar gum to your mix, but it will probably be fine without it (depending on your elevation).
