2 large ripe avocados, pitted and peeled
1/2 cup (125 ml) chopped pimiento-stuffed green olives
1/4 cup (60 ml) extra-virgin olive oil
2 Tbs (30 ml) capers
Juice of 1 lime
Salt and freshly ground pepper to tasteRecipe
Mash the avocados in a mixing bowl, leaving them slightly chunky. Stir in the remaining ingredients. Cover with plastic wrap, pressing the wrap directly onto the surface of the dip, and refrigerate until ready to serve. Makes about 2 cups (500 ml).
