List of Ingredients
1 can rinsed and drained black beans
1 can sweet white corn kernels drained
14 to 16 oz salsa (you choose how hot and whether it's processed or fresh)
2 avocados diced
1/8 cup finely diced sweet onion (I just used my mini food processor)
1/4 cup chopped cilantro
Juice of 2 limes
salt and pepper
Recipe
Mix together.
Refrigerate.
KT's Notes: Gets better as it sits. Serve with chips or as garnish over chicken/fish.... or...just eat it. Man, this is GOOD!
