    My daughter made this today as she is studying Peru in her lessons and as some people may know the potato came from the Incans. I always wondered how Grandfather could have potato soup unless he was an Incan but I guess after 500 years, there have been ALOT of grandfathers.

    List of Ingredients




    3 Tbs (45 ml) CF margarine
    1 large onion, chopped
    2-3 large potatoes, peeled and diced
    3 cups (750 ml) water
    Salt to taste
    1/2 cup (125 ml) all-purpose GF flour
    About 1/4 cup (60 ml) tazo potato milk
    1 cup (250 ml)coconut milk

    Recipe



    Heat 2 Tbs (30 ml) of the margarine in a large pot over moderate heat and saute the onion until tender but not brown, about 5 minutes.

    Add the potatoes, water, and salt and bring to a simmer. Meanwhile, mix the remaining margarine, flour, and enough of the potato milk to make a stiff dough.

    Drop pea-size balls of the dough into the soup and cook until they are tender, about 5 minutes.

    Stir in the coconut cream and return to a simmer before serving.

    Serves 4 to 6.
