    This original recipe was handed down to Steff by her Grandma and Steff adapted it to be gf/cf.

    List of Ingredients




    ½ cup prepared lentils
    6 eggs
    1 tsp Marjoram (the spice not the butter substitute)
    ¼ sweet onion
    Olive Oil
    1 tsp of salt

    Recipe



    Cover a pan with olive oil (for this size fritta I use a medium sauce pan. To double recipe I use a large skillet pan).

    Cook onions to a sweat clear (do not caramelize).

    Add Lentils.

    Beat eggs, marjoram and salt.

    Add egg mixture to pan. DO NOT SCRAMBLE.

    Push mixture to center as the omelet begins to form so
    that the center solidifies before the edge.

    As omelet forms and the top is still eggy…place under broiler to solidify and brown top.


    Blot excess oil.

    Flip onto a plate and then onto another to finish with broiled side up.
