Well I think I can say that the ratios I posted the other day to make your own Tom Sawyer GF Flour Blend were correct. I made the exact apple cake again per my husband's request (it was that good he said!) that I made the other day using the "official" Tom Sawyer blend. After much online research I came up with what I thought would be very close to the exact blend. After trying it today, I can say that it is it. Hopefully if anyone uses this blend it will help financially. I saw the price on the bag that was given to me and it was $18.95 for 5lbs. I didn't cost out the blend below but I can bet it is less than $19.00 for 5 pounds.

4 C white rice flour
1-1/2 cups sweet rice flour
1 cup tapioca flour
1 TBS xanthan
1 TBS unflavored gelatin
