    Dark Chocolate Sorbet

    Source of Recipe

    Lisa Rowley

    Recipe Introduction

Origins Unknown/Dark Chocolate Sorbet from Cuisinart Recipe book (comes with Costco Ice Cream/Sorbet Maker)

    List of Ingredients

Makes about fourteen 1/2 cup servings

    4 cups water
    1 2/3 cup granulated sugar
    1/3 cup brown sugar, packed
    2 cups unsweetened cocoa powder
    1 tablespoon GF vanilla extract

    Recipe

Combine water and sugars in 3 3/4 qt non-reactive saucepan (what does this mean? I used Stainless Steel), place over medium heat and stir till sugar dissolves. Whisk in the cocoa and bring mixture to simmer 2 min., stirring constantly. Remove from heat and transfer to a medium bowl, stir in vanilla and chill in fridge for 2 hours (I left mine 2 days as didn't have time to watch machine till then).

Stir chilled mix, turn machine on, pour mixture into freezer bowl and let mix until thickened, about 25-30 minutes.

Sorbet will have a soft, creamy texture. If firmer consistency is desired, transfer the sorbet to airtight container (we use pyrex dish w/ wax paper on top) and place in freezer for 2 hours. Remove from freezer about 15 min before serving.

This is yummy but VERY filling, we each couldn't eat more than 1/4 cup at a sitting
