Double Coconut Frozen Dessert

List of Ingredients
1/2 cup sweetened coconut flakes
2-13.5 oz cans Coconut Milk
1/2 cup sugar
1/2 teaspoon vanilla* extract
1/4 teaspoon coconut extract
Optional: coconut syrup and fruit
*For an extra treat, replace vanilla extract with the seeds from 1/2 vanilla bean (or more to your own taste).
TOOLS & EQUIPMENT:
Ice cream makerRecipe
Toast coconut flakes in a dry skillet over medium heat, stirring until golden.
Transfer to plate to cool.
Mix Coconut Milk, sugar, coconut flakes and extracts until sugar is dissolved.
Pour coconut mixture into ice cream maker and follow
manufacturer’s instructions.
Serve with coconut syrup and seasonal fruit if desired.
YIELD: 3 1/2 cups
TIME: 10 minutes to assemble
