List of Ingredients
2 apples
water
1 T. lemon juice
4 eggs
1.5 cups milk
1.5 cups rice flour or gf flour mixture
¼ tsp. salt
4 Tbsp oil
cinnamon
Recipe
Peel apples if desired. Thinly slice. Put in a bowl and cover with water. Add lemon juice. Set aside.
Beat eggs 2 minutes.
Add milk, flour and salt.
Spread oil in glass 9x13 baking dish.
Pour batter in dish.
Top with apples and generously sprinkle with cinnamon.
Bake for 20-35 minutes at 375 degrees (or 400 degrees for metal baking dish).
Author's Notes: For variety, this apple and cinnamon topping can be replaced with any flavor jam and powdered sugar. Bake first, and then spread jam on top, and sprinkle with powdered sugar.
