    Baked Cereal Grains

    List of Ingredients


    • 1 cup quinoa, amaranth, teff, millet or GF grain of choice
    • 1 medium onion, chopped fine
    • 2 cups vegetable stock


    Instructions


    1. Mix cereal grains and onion with 1 cup boiling stock in pan or casserole with tight fitting cover. Bake in 300 degree F oven for 45 minutes.

    2. Add second cup of hot stock and continue baking 30 to 40 minutes or until grains are soft and mixture is almost dry.

    3. Variation: Add 2 tablespoons minced parsley; 1/2 to 1teaspoons of your favorite herbs.



    Final Comments


    NB from Josh: I suggest you keep a close eye on it after 20 minutes or so because my stock was gone well before 45 minutes was up.

    Note from BL Try using different stocks for different flavours as well. Chicken stock works nicely too but I haven't tried turkey, mushroom or beef yet.
