    Quinoa Corn Chowder

    List of Ingredients

    2 cups water
    1/4 cup rinsed quinoa
    1/2 cup potatoes -- cubed
    2 tablespoon carrots -- diced
    1/4 cup chopped onion
    1 1/2 cups corn - (fresh - frozen - or canned)
    2 cups dari-free milk
    1 tsp salt
    1 dash black pepper
    1/4 cup chopped parsley
    GFCF margarine

    Recipe

    Simmer quinoa, potato, carrot, and onion until tinder (about 15 minutes). Add corn. Bring back to boil and simmer another 5 minutes. Add milk. Bring just to boil.

    Season to taste. Garnish with parsley and dab of margarine.
