    Qunioa Vegetable Soup

    List of Ingredients

    4 cups water
    1/4 cup quinoa -- rinsed
    1/2 cup carrots -- diced
    1/4 cup celery -- diced
    2 tablespoons chopped onion
    1/4 cup green pepper -- diced
    2 cloves chopped garlic
    1 tablespoon olive oil
    1/2 cup chopped tomatoes
    1/2 cup cabbage -- chopped
    1 tsp salt
    chopped parsley

    Recipe

    Saute quinoa, carrots, celery, onion, green pepper, and garlic in oil until golden brown. Add water, tomatoes, and cabbage, and bring to a boil.

    Simmer 20 - 30 minutes or until tender. Season to taste and
    garnish with parsley.
