    List of Ingredients

    1 pkg. hardwood smoked Applegate Farms Turkey Bacon, small dice
    1 large yellow onion, julienned
    1 large zucchini, cut into quarter pieces
    6 large garlic cloves, sliced
    4 sprigs fresh thyme or 1/2 teaspoon dried thyme
    1 teaspoon sea salt [or more to taste]
    1/2 teaspoon black pepper
    3 cups buckwheat groats [I used 2 cups buckwheat groats & 1 cup kasha[roasted groats]]***link below
    2 1/2 oz. raw baby spinach [this was 1/2 of a package from Whole Foods]
    Chicken Broth or Water

    Recipe

    In large pot, saute' bacon, onions, zucchini, garlic and spices until tender. {You may use some olive oil if you would like...I did not].

    Add in groats and spinach, and let saute' for a couple minutes with the vegetables.

    Add in enough chicken broth or water to completely cover.

    Put on lid and let it simmer for 15 - 20 minutes, or until groats are tender. {You may need to add additional water or broth throughout cooking time].

    Adjust salt & pepper.

    Serve with a nice green salad and garlic bread.


    Amy's Notes: I like to reheat this for breakfast by putting it on parchment paper or a pan, spread out into a single layer. Let it bake at 375 degrees in the oven until golden brown and crispy around the edges.
