Cool Mint Patties

Very similar to a York Peppermint Patty, these cool and refreshing Mint Patties are a perfect treat during the holidays.
List of Ingredients
1/4 cup light corn syrup (if you don't mind it golden not white, use Lyle's Golden or try the sugar syrup in the archives)
1 teaspoon peppermint extract
1/4 cup coconut butter, softened
1 to 2 drops food coloring (optional)
4 3/4 cups sifted powdered sugar (about 1 pound)
Recipe
Use a mixing bowl to mix the corn syrup, peppermint extract and slightly melted coconut butter.
Then add the sugar a little bit at a time and incorporate into the mix.
Add the amount of food coloring to achieve your desired color and blend well.
Roll this mixture into small balls.
Put them a couple of inches from each other on a cookie sheet that has wax paper.
Use a fork and make each one flat.
Let the mint patties set in the refrigerator for several hours.
Remove from the refrigerator and let stand at room temperature for several days.
Transfer to a container with an airtight lid and store in the refrigerator.
Note from BL: These make my teeth ache just thinking about them, but they are a nice treat for company during the holidays, and to make them extra special, you can dip them in cf melting chocolate.
