    List of Ingredients




    2/3 cup brown rice flour
    1/3 cup sweet rice flour
    1/3 cup tapioca starch
    1 TBL cinnamon
    1 tsp ginger (use more for a cookie with a real ginger bite)
    2 tsp xanthan gum
    1 tsp baking soda
    1/2 tsp salt
    1/4 cup sugar
    1/4 cup oil
    1/4 cup molasses
    2 TBL water

    Recipe



    Combine dry ingredients in a large bowl and then add the oil, molassses and water.

    Mix well, adding more tapioca starch as needed to make a soft dough that can be kneaded.

    Roll out on a tapioca floured board to a thickness of 1/4". Cut out with gingerbread people cutters, dipping into tapioca starch after each use.

    Bake in a preheated 350 degree oven on ungreased cookie sheets for approximately 14 minutes. Remove from pan while cookies are hot, cool on a wire rack. Cookies will be slightly chewy. Adjust cooking time to your preference for doneness.
