Gingerbread Spice Cookies

List of Ingredients
2 cups Bobs Red Mill GF Sorghum Flour
2 1/2 teaspoons xanthan gum
2 teaspoons ground ginger (or slightly more)
2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup brown sugar
1/2 cup unsweetened applesauce
1/2 cup molasses
1/2 cup safflower oil
Recipe
Preheat oven to 350. Spray a cookie sheet.
Add dry to wet and mix until combined.
Scoop round bite-sized bits of the dough onto a cookie sheet, one inch or so apart.
Bake 9 minutes each. The cookies, when done, had a little resistance when touched but sprang back and were slightly browned on the bottom but not burnt. 9 minutes was exactly right in my oven but it might vary. The smaller sized cookies worked out best.
