    1 cup sesame seeds, preferably unshelled
    1 teaspoon fine sea salt

    Toast sesame seeds in a skillet over medium heat, stirring constantly for 10 to 15 minutes or until they are toasted and take on an orange hue.

    Remove to a plate to cool.

    Add salt to the same dry skillet.

    Stir constantly, toasting the salt for about 3 to 5 minutes.

    Add salt to sesame seeds.

    When cooled, transfer the mixture to a food processor and process to a powdered consistency, breaking the seeds up as much as possible, but stopping before mixture forms a paste.

    Store the gomashio in an airtight container in the refrigerator for up to a month.

    Author's Note: This traditional Japanese seasoning of toasted sesame seeds and sea salt adds a burst of nutty, salty flavor to any dish. Try over rice and vegetables.

    Makes about 1 3/4 cups
