    2 tsp ground cumin
    1 tsp ground coriander
    1/2 tsp chili powder
    1/2 tsp smoked paprika
    1/2 tsp ground cinnamon
    1/4 tsp ground allspice
    1/4 tsp ground ginger
    1/8 tsp cayenne pepper
    pinch ground cloves

    Recipe



    Mix together and store in an airtight container.

    Author's Note: This salt free version of a traditional Moroccan spice blend is a savory rather than sweet mix. It is particularly good on salmon, sweet or russet potatoes, and on winter squash. Ras el Hanout is the Moroccan name for this spice blend.

    Martha's Note: My favorite spice blend recipe is this Moroccan one. I quadruple it and keep a jar on the shelf. When I do a roasting of winter vegetables, especially butternut squash, sweet potato and carrots, I like to toss the peeled, cut up chunks with a little olive oil and this spice mix before putting them in the oven.
