    Maple Brine

    List of Ingredients

    4 quarts water
    2 cups dark brown sugar
    1 cup gf soy sauce or wheat free tamari
    1 cup maple syrup
    3/4 cup sea salt
    8-10 whole cloves garlic, peeled
    6-8 whole bay leaves
    3 large sprigs of thyme
    2 teaspoons whole peppercorns

    Recipe

    Place 2 quarts of water and other ingredients in a large pot and bring to a boil, dissolving sugar and maple syrup.

    Remove from heat, add remaining 2 quarts and allow brine to cool completely before using.

    Place the turkey in a container and pour in enough brine to completely cover the turkey with an inch or two to spare. (You do not want any part of the turkey above the surface of the brine.)

    Now you put the whole thing in the refrigerator.

    Soak the turkey in the brine for about 1 hour per pound. (Brining too long is much worse than not brining enough so watch the time.)

    Rinse the turkey making sure to remove all salt. (Otherwise the turkey will be too salty.)

    Donna's Note: It takes about 2 gallons of brine for an average size turkey so the ingredients in this recipe will have to be doubled.
