Mama D's Moist Meatballs

Original Recipe by Donna Rollison with a suggestion of adding
spinach from Stephanie (brneydgrlie).
List of Ingredients
1 1/2 lb ground turkey
1 med Idaho (Russet) potato boiled whole
1 handful fresh spinach
1/2 tsp garlic powder
salt and pepper to tasteRecipe
Line a baking sheet or pan with parchment paper.
Finely chop spinach and place in a medium to large mixing bowl.
Remove skin from potato, cube and place it in the mixing bowl.
With a manual potato mixer mash the potato and spinach until creamy, with no lumps.
Add ground turkey, garlic. Also add the salt and pepper to taste.
With hands mix well.
Form meatballs about the size of golf balls and place on prepared pan.
Bake in a 350 f oven for approximately 45 minutes.
Donna's Note: When I made these I turned the oven off at the 45 minute mark and left them in the oven for 15 minutes as I had to run out. They were perfectly done and still very moist.
