    For those looking for deli style meats free from additives this is fairly simple recipe to make your own.

    List of Ingredients




    5 pounds fresh ground meat (venison, moose, elk) OR pork
    3 tablespoons papaya based GFCF meat tenderizer
    1/4 teaspoon garlic -- dry, powdered
    1 tablespoon crushed fennel seed
    1 tablespoon kosher salt
    1 tablespoon GFCF hot sauce (more or less)

    Recipe



    Grind meat and let set at room temperature. Mix in all spices and knead mixture as with bread, every hour for 4 hours to work the spices through meat. Let set overnight in refrigerator to allow flavors to blend.

    Preheat oven to 150 degrees. Roll out meat mixture in stick form and bake for 8 hours.

    To check for doneness, cut a piece in center of stick.

    I then slice it up and freeze in big zipper bag for pizza. Good with domestic meat also.
