List of Ingredients
/2 cup brown rice flour
1/2 cup rice flour
1/2 cup potato starch flour
1/2 cup tapioca flour
1 tablespoon xantham gum
1 teaspoon salt
3 tablespoons spectrum shortening
3/4 cup hot water
Recipe
1.Combine all flours, xantham gum, and salt.
2.Add shortening and cut in with pastry blender or 2 knives until crumbly like breadcrumbs.
3.Add water and stir with a spoon. Form into a ball with hands.
4. Press with tortilla press or rolling pin, with slightly oiled plastic wrap on both top and bottom of dough.
5. Preheat ungreased skillet to 400 degrees, if electric, or until water droplet sizzles.
6. Cook until bubbly, flip and cook.
Lisa's Note: If corn free you can substitute another binder for the xanthan gum.
