2 cups gluten-free flour mix
2 teaspoons xanthan gum
1 teaspoon sugar
1 1/4 teaspoon salt
1teaspoon baking powder
2 tablespoons shortening
1 cup warm water
Recipe
1. Heat skillet over medium heat.
2. In large bowl mix flour, xantham gum, sugar, salt, and baking powder. Cut with pastry blender, fork, or 2 knives.
3.Add warm water slowly, stirring after each addition, until dough is smooth. Form into balls about the size of tennis balls.
4. Flatten with rolling pin between wax paper. about 1/2 inch thick 10"-12" in diameter.
5. Remove paper and cook about 45 sec when bubbles appear then flip and cook about 20 sec.
