    This is an original recipe from Carolyn's Mom

    List of Ingredients




    1 pound ground meat
    2 Tablespoons olive oil
    1 medium onion, chopped up (can omit)
    1 clove garlic, chopped up (you can use garlic powder to taste)
    1/2 cup cornmeal
    1/2 cup cf milk of choosing
    1 to 2 Tablespoons chili powder
    1 can cream style corn
    1/2 cup slivered black olives (can omit or use green olives)
    2 eggs,beaten (or egg substitute)
    1 1/2 cups tomato juice (if you can't have tomatoes use beet juice, carrot juice etc)
    salt to taste

    Recipe



    Crumble up ground meat into olive oil in skillet, cook until meat is browned.

    Add the onion, garlic and cook stirring until onions, garlic are tender.

    In top of double boiler, mix cornmeal and milk of choosing.

    Make a paste of 1/2 cup of tomato juice and the chili powder.

    Add to cornmeal with remaining tomato juice and cook over boiling water, stirring occasionally, for 20 minutes.

    Mix all ingredients and put in a 2 quart casserole pan.

    Bake in 350 degree oven for 30 to 35 minutes or til done.

    Serves 8

    Carolyn's Note: I've added chopped bell peppers (all colors), jalapenos, cheese sub, to this recipe and it taste great.
