    List of Ingredients




    Dry Ingredients
    1/2 cups white sugar
    1/2 teaspoon salt
    2 teaspoons gluten free baking powder
    1 1/4 cups baking mix (like the Mock Better Batter Mix filed under flour mixes)
    3/4 cups blueberries

    Wet Ingredients
    1/4 cf margarine (melted)
    2 eggs
    1 cup, mock buttermilk (recipe filed under MYO and Dairy subs)

    Recipe



    Preheat oven to 350°F.

    In a mixing bowl combine the sugar, baking powder, salt and baking mix.

    Add the blueberries and blend.

    Mix the melted margerine, eggs and mock buttermilk.

    Pour over the dry mixture and combine.

    Pour the batter into greased muffin tins or use paper liners if you like.

    Bake for 15 minutes until lightly brown or until an inserted toothpick comes out clean.
