2 cups SUGAR
2 STICKS CF MARGARINE(8 OZ)-MELTED
1 CUP ANY MILK SUB (I USED VANILLA ALMOND MILK)
3 LARGE EGGS ( EGG SUB CAN BE USED)
1 TABLESPON VANILLAOR ANY FLAVOR U CHOOSE
1(31/2OZ)BOX SAFE INSTANT PUDDING MIX(ANY FLAVOR, I USED PUMPKIN)
1/2 TEASPOON SALT
1 1/2 TEASPONS BAKING POWDER
1 1/2BAKING SODA
2 TEASPOONS CINNAMON
3 CUPD GF ALL PURPOSE FLOUR OF UR CHOOSING
1 1/2 CUPS MASHED BANANAS
1/2 CUP GRATED ZUCCHINI OR ANY VEGGIE OF UR CHOOSING
1 CUP CHOPPED NUTS (OPTIONAL)Recipe
PREHEAT OVEN TO 300 DEGREES.
GREASE MUFFIN(OR USELINERS) OR GREASE LOAD PANS. I USED A PAN THAT HAS 12 MINI LOAFS PLUS IT MADE 18 MUFFINS.
MIX ALL WET INGREDIENTS TOGETHER MIX WELL.
MIX ALL DRY INGREDIENTS TOGETHER MIX WELL.
SLOWLY ADD DRY INGREDIENTS TO WET INGREDIENTS. MIX WELL.
POUR BATTER INTO PREPARED PANS. PLACE IN OVEN COOK FOR ABOUT AND 1 HOUR. BUT CHECK PROGRESS ABOUT EVERY 20 MINUTES OVENS VARY. COOK TILL DONE. INSERT TOOTHPICK IN MIDDLE AND SEE IF IT COEMS OUT CLEAN. I COOK GF BREADS SLOWLY TO MAKE SURE THEY COOK IN THE MIDDLE.
THESE ARE DELEICIOUS MY GRANDCHILDREN AERNT ON THIS DIET THEY HELPED ME MAKE THEM AND THEY WERE EATING THE BATTER ALSO. THEY LOVED THEM. I'M TEACHING THEM TO COOK GF MEALS. AND ANY SPECIALTIY MEALS THEY NEED TO LEARN ONE FOR ME AND OTHERS THEY MEET UP WITH.
