    List of Ingredients




    3/4 c sorghum flour
    3/4 c tapioca starch
    3/4 c pumpkinseed flour (grind raw seeds in processor)
    1 1/2 tsp cream of tartar
    3/4 tsp baking soda
    1 tsp Xanthan gum
    1/4 tsp salt
    4 T sugar
    4 T coconut oil (or other fat)
    1/2 c milk sub (I used hemp milk)
    1 egg
    1/3 c snipped dried fruits/ fruit leather of choice (I used persimmon, papaya, mango, raisins and dragonfuit)

    Recipe



    Preheat oven to 400* F.

    Mix milk and egg. Add fruits to soften a bit.

    In a large bowl combine dry ingredients. Cut in the oil until the flour is crumbly.

    Gently stir in liquids. Batter will be soft like muffin batter.

    Spread in a 10-inch circle on a parchment lined baking sheet.

    Bake 15 minutes. Remove from oven and cut into 8-10 wedges with a pizza cutter.

    Separate slightly and return to oven for 5 minutes.
