    1 1/3 cups GF flour blend 1/4 cup sugar 1 .5 tablespoon baking
    powder 3 tablespoons
    * corn oil (I use canola or olive but shortening can be used)* 3/4 cup
    uncooked quick oats, or other rolled cereal 2/3 cup undiluted DariFree
    (see note above) 3/4 cup medium grade or better maple syrup 1 beaten
    egg

    Recipe



    1. Combine flour, sugar, baking powder and salt.
    2. Cut in oil or shortening until mixture resembles coarse crumbs.
    3. Stir in oats.
    4. Mix evaporated milk sub, maple syrup and egg.
    5. Add to dry ingredients all at once; stir just until moistened.
    6. Fill greased medium muffin cups 2/3 full.
    7. Bake in hot oven (400F) 20 to 25 minutes.
    8. Remove from pans immediately.
    9. Serve warm or at room temperature.
