Oatmeal Chocolate Muffins

List of Ingredients
* 1 Cup unsweetened apple sauce
* 2 teaspoons olive oil
* 1 cup sucanat (unprocessed sugar) or 1/2 cup honey or agave nectar
* 1 tablespoon vanilla
* 1/2 teaspoon almond extract
* 3 eggs
* 1 1/2 cup ground gluten-free oats
* 2/3 cup cocoa powder
* 4 teaspoons baking powder
* 1 teaspoon baking soda
* 1 teaspoon salt
* 1/4 teaspoon cinnamon
* 1 cup cf chocolate chipsRecipe
Line muffin tins with paper. Preheat oven to 350. Combine apple sauce, oil, sugar (or honey/agave), vanilla, almond and 3 eggs. Stir in remaining ingredients, except chocolate chips. Fold in chocolate chips. Add dry ingredients.
Fill muffin liners with batter, up to the top. Bake 15-20 minutes until a toothpick inserted in the center comes out clean.
Makes 16 muffins
