Poha Muffins

List of Ingredients
1/2 c brown rice flour
1/2 c poha OR quinoa flakes
1 T honey
1 t GFCF baking soda
1/2 t salt
1 egg
1 ripe banana, 3/4 c applesauce, pear sauce, pumpkin, grated carrot, grated zucchini, etc. (use your imagination)
Add optional flaxseed, sesame seed, sunflower seed, chopped dried fruit, or nuts
Recipe
Preheat oven to 400 F
Mix flour & flakes or Poha with dry ingredients.
In a separate bowl mix banana or other wet fruit, with egg and honey, add to dry ingredients.
Pour into greased muffin tins. Fill muffin tins 1/2 - 2/3 full.
Bake 20-25 min.
